Chef Peter Sclafani, chef/owner of Ruffino’s is always good for a surprise on our Friday Foodie segement; today, it was world class. In honor of August as Lobster Month at Ruffino’s, he prepared Lobster Caprese Salad. Steamed Lobster tail (12 minutes max), EVOO, fresh basil, local cherry tomatoes (halved), fresh cracked black pepper, and beautiful burrata-mozzarella cheese.
