Lobster Caprese Salad: The Friday Foodie

Chef Peter Sclafani, chef/owner of Ruffino’s is always good for a surprise on our Friday Foodie segement; today, it was world class.  In honor of August as Lobster Month at Ruffino’s, he prepared Lobster Caprese Salad.  Steamed Lobster tail (12 minutes max), EVOO, fresh basil, local cherry tomatoes (halved), fresh cracked black pepper, and beautiful burrata-mozzarella cheese. Never, ever, had a better caprese in my life.  You can make it at home by following the directions above, and, you can order it off the menu all month at Ruffino’s.
